Unfortunately, the game does not feature a third-person mode. It is explicitly made in first-person mode. In an interview with IGN, the game director said they want you to be close to nature, and only in first-person mode can give you the best view of it.
When you wander around the enormous world, you will explore it in first-person mode. But be satisfied when you mount some creatures to fly around or have combat in the sky, and you can see your character in third-person mode. Some cut scenes will also show your full character in them. If you invest time in character creation and customization to make your character cool and stand out, all your efforts won’t be wasted.
