There are different types of Knives in Resident Evil 4 Remake, like; Combat Knives and Kitchen Knives. You can always swap for another if you have one kind of Knife break. If you are under attack and your enemy grapples you, it will take 3 episodes and 3 swipes of the Knife to break.
